Circular-based alternative protein extraction from grape seeds for the wine-making process

Project description (English)

Although grape seeds are rich in protein, 40% of the residues of the EU wine industry are destined for secondary uses (fertilizers or fuel). The project aims to implement a circular business model based on a process to extract proteins from grape seeds to be exploited as a fining agent in place of animal proteins or for other purposes. Industrially it is foreseen the possibility of producing 120 tons per year by 2031, covering 17% of the Italian protein demand (5% of the EU), with a reduction of greenhouse gas emissions compared to traditional processes.
